To make the sponges you need 8oz of sugar 8oz of sugar 8oz of self raising flour 4 eggs 2 teaspoons of vanilla extract 2 tablespoons of good drinking chocolate 2x 18 cm cake tins lined with baking paper Cream the butter and the sugar together in a bowl until pale and fluffy. Beat in the eggs, a little at a time, and stir in the vanilla extract. Fold in the flour and drinking chocolate Divide the mixture between the cake tins and gently spread out with a spatula. Bake for 20-25 minutes, or until golden-brown on top and a skewer inserted into the middle comes out clean. Remove from the oven and set aside for 5 minutes, then remove from the tin and peel off the paper. Place onto a wire rack In a clean bowl mix 9oz of icing sugar and tablespoons of drinking chocolate with ½ of butter and 2 tablespoons of hot coffee to a smooth paste then add 2oz of crushed walnuts Spread on one sponge then top with whip cream then place the other sponge on top Place some more cream on the top with walnuts and grated milk chocolate The enjoy |
