If you are going to site it permananetly you may as well go for the biggest you can afford. This means a 6.5/7.0m twin axle.

There is an issue with getting it to your pitch. As legally you cannot tow the twin axle hobbys with 4x4 etc, but like most of us, as a one off you take the chance.

All the large hobbies I have seen have a fixed end bedroom and apart from the dry versions, shower and toilet.

There are many options for the additional beds i.e. some have fixed bunks. You need to look at the layout plans to decide what best suits you. See here:

The UK special versions are not listed here, but are not to disimilar to the UMFE spec.

Although mine has a shower installed I wouldn't like to use it. I reckon water would get behind all the fixtures and fittings and cause long term damp problems, but maybe I am just being conservative.

£5k should easily get something suitable.
