Classic Cocktails

Let's start with a Margarita. (no off colour 'salty rim' jokes please)

Proportions are important with cocktails, absolute amounts are not. Use a spirit measure, a jigger, an egg cup, whatever.

Two shots of tequila (your choice, I use Cuervo Gold)
One shot of Cointreau (Triple Sec is the classic ingredient but Cointreau works better than anything else)
One shot of freshly squeezed lime juice
(non standard but I add a half shot of lime cordial)

I use one of the lime halves (after squeezing) to rub the rim of the glass (only halfway round to leave an unsalted space), I like to use a Proper Margarita Glass but you can use a tumbler, sprinkle some salt on a saucer and rub the rim in the salt. After salting, put the glasses in the freezer for a few minutes while you shake all the ingredients over ice (you need loads, 3/4 ill the shaker), strain into the chilled glasses.

My version is halfway between an Elegante and a straight up Margarita and purists will omit the lime cordial (Roses is best). For me, it takes the edge of without sweetening it up too much.

Forget slush puppy, frozen Margaritas and Margarita mixes (yes, I know Cuervo sells it but they should know better. It's a sort of orange and lime cordial thingy that is no substitute for the Cointreau and fresh lime juice)

I put a 'Zombie' cocktail in the 'now open' thread on Sunday, so I'll start my drinks tab rolling here with a Mai tai!

An authentic mai tai cocktail recipe with rum, orange and almond.

Ingredients
25ml/1fl oz rum
25ml/1fl oz gold rum
2 tsp orange curacao (available from online retailers)
2 tsp orgeat syrup (available from online retailers)
2 tsp vanilla syrup
25ml/1fl oz fresh lime juice
To serve
mint sprig
pineapple slice
Preparation method
Place all the ingredients in a cocktail shaker with a handful of ice and shake hard.
Strain the cocktail in to a tumbler filled with crushed ice and garnish with a mint sprig and a pineapple slice,
or to be really cool get coconut shells as served at Trader Vics

Briiliant lyrics...'he was looking for a place called Lee Ho Fook's" for a dish of beef chow mein....In the 1970's we used to go to LHF's for a portion of duck, rice and greens for £2.50!
It was in Wardour Street and incredibly busy all day and night. Our nannie loved chicken chow mein....we didn't meet the werewolf but we met many hairy hippies!

I'm in the Jet lounge (Vienna) courtesy of the Priority Pass card supplied by my company. It's weird: free WiFi, a fridge full of mini magnums (lollies, not champagne :) ) , cheesecake, bubbly but no soup or other lunch eatables (my Bratislava meeting overran , so no lunch). About 10 types of bread but only little pots of gunky stuff (some kind of flavoured butter or creamy spread thing). There are crisps, nuts, etc. I will try to construct a cocktail from the various cheap spirits available.

There are little smoking lounges, unbelievable!

Well, I didn't do the Jet Lounge cocktail in the end. I had some Sekt and a glass of cheap brandy (Bisquit star star ).

I'll give it some though. I'll be in Belgrade the week after next but the lounge there is really bizarre. You can't help youself to anything. You are allowed one drink and one sandwich, which you have to order from some bloke who then brings it to you. I'm not sure I will bother with it unless I am desperate. Moscow in September, I can't remember what the lounge was like there. I guess vodka :)

Ok, well let's have something for the weekend, or today at least!.....consulting the Diffords guide, I see that today is the day the Atom Bomb made it's debut! so the drink is a Trinity! Why? does anyone know?

Trinity

Glass:Martini

Method:

2½ shots Johnnie Walker Scotch Whisky
¼ shot Bols apricot brandy liqueur
1 shot Noilly Prat dry vermouth
¼ shot Giffard Menthe Pastille liqueur
1 dash Angostura orange bitters

STIR all ingredients with ice and strain into chilled glass.

Garnish:Orange twist (discarded) & two maraschino cherries

Here's today cocktail..In these hard and trying times of newspaper publication, it's good to raise a glass and salute a former institution!

TODAY IS THE DAY PUNCH MAGAZINE LAUNCHED

Although it now only survives as a cartoon library and website, Punch was once one of the best-known magazines of all time - and one of the only successful magazines to take its name from a cocktail.

Founders Ebenezer Landells and Henry Mayhew launched Punch on this day in 1841, inspired by a French magazine. The aim was for the magazine to be less bitter and gnarly than other British comic publications, and also better written, under the editorship of a man named Mark Lemon.

At an early meeting, someone observed that the magazine should be like a good Punch mixture - which is, of course, nothing without Lemon. And so the name was chosen. Our choice of Punch for today dates back even further than Punch magazine. It's the timeless Fish House Punch, most likely created in Philadelphia in 1732. courtesy of Diffordsguide.com

Method:

SHAKE all ingredients with ice and strain into ice-filled glass.
1 shotCourvoisier Exclusif VSOP cognac
1 shotBacardi Oro golden rum
¾ shotCrème pêche de vigne liqueur
¾ shotFreshly squeezed lemon juice
¼ shotMonin Pure Cane sugar syrup (65°brix, 2:1 sugar/water)
2 shotsChilled mineral water

Garnish:Lemon slice

Today I had Buck's Fizz with brunch.

Freshly squeezed orange juice topped up with bubbly. Easy peasy but very nice.

I did a load of egg fried bread (French toast?) with bacon and (a Scottish thing) 'square sausage' (Lorne Sausage)

Americans always ruin French toast by sprinkling icing sugar, cinnamon and God knows what else on it. I like it with bacon.

I'm not sure a cocktail, classic or otherwise, will be appropriate for today, or even the rest of the week as I always associate one with fun and relaxation, which I don't foresee happening around our seat of Government in the next few days, so am pretty certain there will be quite a few people who will need to imbibe something a little more sterner and robust, like a pure vodka shot or a dram or two of single malt....no blends or mixers needed.

So today with RB's permission (no, not the one with the red 'Charles II' hairdo!) I will recommend to all those in the House that they partake in the downing of a few single shots of 10 year old Laphroaig, "a full bodied all malt Scotch from the remote island of Islay in the Western Isles of Scotland. It has a full sparkling gold colour with a surprising sweetness and hints of salt and layers of peatiness on the palate!"

There now, that should help track down all of those who are actually to blame in the Murdoch Affair! dalek

MY brother is a big fan of Laphroaig, it's a bit too 'peaty' for me but an excellent choice for those that like that smoky, peaty stuff. I generally drink 'Glemorangie at home and Highland Park when I see it.

I have been neglecting my cocktail duties and i am indebted to you Mobs for tending the bar while I attend to the various crisis that seem to be arriving on a daily basis in my working and social calendar.

My sister and her husband stayed with us for a few days on their way to Italy and on the way back (they left this morning). I have to meet my cousin (and husband) from Canada for dinner tonight, as they have turned up in London, I was in Bratislava last week and will be in Belgrade next week. Then I am off to Scotland and back to Bratislava in August. I have to go back to Moscow in September and take my wife to Paris for her birthday at the end of September. Oh, and my niece is getting married in October, which means staying a couple of nights somewhere in Gloucester. I'm going mad with it all :(

BTW, as a Scot, I should point out that the expression is 'Single malt' and not 'all malt' :)

Escalator Martini

2 parts pear schnapps (I use Vilmos, which is Hungarian)
1 part Zubrowka (bison grass flavoured vodka)
4 parts apple juice (the 'not from concenrate' cloudy stuff is best)
a small dash of sugar syrup

Shake with ice and strain into a chilled martini glass
Serve with slice of pear on the rim

This is one of my favourites :D

Oh Gosh!

½ shots Bacardi Superior rum
1 shot Cointreau triple sec
½ shot Freshly squeezed lime juice
¼ shot sugar syrup
½ shot Chilled mineral water (omit if wet ice)


Glass: Martini
Garnish: Lemon zest twist

Method: SHAKE all ingredients with ice and fine strain into chilled glass.

I think 'Oh Gosh!' is appropriate. I am thinking about a 'pie in the face' cocktail but it may take some time.

Actually, last night I had an Irish Coffee (in the proper glass). Just a slug of Jameson's with some sugar, normal filter coffee and some double cream on the top. I know the real experts use single cream but the sugar ratio has to be right and you have to float it over the back of a spoon and all that tosh. Double cream is fine, it floats easy, but a splodge from a aerosol isn't IMO.

Cab coming at 12.00 to take me to Heathrow (off to Belgarde via Munich) so no proper lunch. Brunch again this morning; scrambled egg, black pudding, bacon and toast. A pot of darjeeling and some Buck's Fizz ( small bottles of Flexinet and some Sainsbury freshly squeezed, but very nice). I use a long teaspoon thingy (I think it originally came with a coffee jar some time ago)just to stir it up slightly. I put the orange in first and top up with the bubbly but it just needs a slight stir to mix it properly.

Time for a celebratory cocktail today after all that bat on willow action!

INDIAN SUNSET

Glass:Martini

Ingredients:
2 whole Cardamom pods
2 shots Ketel One vodka
½ shot Domaine de Canton ginger liqueur
1 shot Mango purée
½ shot Freshly squeezed lime juice
⅛ shot Monin Pure Cane sugar syrup (65°brix, 2:1 sugar/water)

Method:
MUDDLE cardamom in base of shaker.
Add other ingredients, SHAKE with ice and fine strain into chilled glass.

Garnish:Mango slice
Comment: Mango, ginger and cardamom are all classic Indian flavours and here are rum laced with a splash of lime juice

1.75 shots of scotch (I'm using Grouse)
1 shot apple juice (cloudy stuff, not from concentrate)
1.25 shots of Sauvignon Blanc
1/3 of a shot of sugar syrup
1/4 shot of lemon juice

Shake with ice and strain into chilled martini glasses.

I'm off cocktails at the moment. Watching England / Wales on my huge TV in Belgrade on some station called SPORT KLUB and drinking a small bottle of Vranac (red wine) from the mini bar. There are no spirits or beer in there (or crisps or nuts or Toblerone) and no price list, so I guess it's free.
