I was really surprised to see this being made on BBC2 yesterday morning in Something for the Weekend's drink segment, when a guy, sorry - mixologist, makes interesting or unusual cocktails! Here's the recipe, which involves liquid nitrogen, a sure Health & Safety risk, which quite frankly they underplay here... Liquid nitrogen eggnog ice cream With a little care, liquid nitrogen makes the creamiest ice cream around....says the BBC's webpage Ingredients 2 free-range eggs 25g/1oz sugar 50ml /2fl oz single cream 150ml /5fl oz milk 100ml /3½fl oz brandy 150ml/5fl oz liquid nitrogen ice cream cones To garnish cinnamon stick freshly grated nutmeg Preparation method Place all of the ingredients into a blender and blend until smooth. Reduce the speed and slowly add the liquid nitrogen. (CAUTION: liquid nitrogen is extremely cold. Wear gloves when handling and avoid skin contact.) Scoop the mixture into ice cream cones. Garnish with a cinnamon stick and a grating of nutmeg on top. *************************************************************************************** I wonder how it fares using an ice cream machine...I have a bottle of 'Vajecny Sen' liker (egg nog), given to me by a friend from Slovakia, so I might be tempted but definitely in my ice cream maker not faffing about with a highly dangerous product that could give a severe case of finger frost bite! Yes it does sound pretty off putting...and if you take out the brandy in the recipe and obviously ignore the liquid nitrogen, well you get a traditional egg-based dairy ice-cream! |

Fact: 80% of air is nitrogen by volume. So it’s like squirting very cold air in, as the liquid nitrogen will vapourize in a trice. Maybe it’s the 20% oxygen you crave? |

Always! Can't have too much of the 'oxygen' - when staying in Colorado in the mountains, we 'plugged' ourselves in every night to an oxygen supply...I never looked (or felt) healthier...
