One for the ladies perhaps.... Santa Baby Ingredients 35ml/1½fl oz vanilla vodka 1 tbsp apple liqueur 1 tbsp triple sec 25ml/1fl oz cranberry juice 2 clementine segments Preparation method Place all the ingredients into a cocktail shaker. Add a handful of ice and shake hard. Strain the drink into a martini glass, sprinkle dusting of fine vanilla sugar from a height around the glass for 'snow' effect.... Sip whilst singing along to this..... http://www.youtube.com/watch?v=xOMmSbxB_Sg The second cocktail is a little more full bodied; containing the lovely, deep, darkest raspberry liquer that Rum discussed recently.... Wonderland Ingredients A few mixed berries: crushed raspberries, blackberries and pomegranite seeds 25ml/1fl oz Cognac 25ml/1fl oz Chambord dark raspberry liqueur 25ml/1fl oz fresh lemon juice 1 tbsp sugar syrup 25ml/1fl oz fresh apple juice Preparation method Place all the ingredients into a cocktail shaker with a handful of ice and shake hard. Strain the drink into a tumbler. To garnish Put a couple of Winter berries on the side of the glass - say one raspberry, one blackberry and serve. whilst listening to the dulcet tones of Dean.... http://www.youtube.com/watch?v=ale-P-LSkwM Edited by Mobson, Dec 5 2011, 12:56 PM.

A technical question Mobs, about the 'Santa Baby'. Do you muddle the segments (bash them up a bit)? ![]() |

I would halve a clementine and using one half, give it a good crush, then put the squeezed fruit with skin on plus its juice into a tall glass, pour over the wet ingredients then fit my shaker over the glass, do the 'Cocktail bar shake' before straining it into the martini glass... "...fit my shaker over the glass, do the 'Cocktail bar shake' before straining it into the martini glass..." I hope you give it a smart tap to seal it before starting to shake ![]() |

Question Rum...do you think keeping the skin on the clemmy will give the drink a slightly bitter taste? |

Are you taking the pith? Personally, I would peel it.

there's no pith in those tiny sweet little clemmys...I saw a demo of this drink being made and the skin was left on..... |

I don't really know, Mobs. I don't do anything with segments in. I'd be inclined to squeeze the juice out. Try it both ways and see what you prefer.

Just for clarification, Mobs, what do you mean by 'segments'? To me it is when you peel an orange, or clementine or mandarin and seperate it into the natural segments, which is why I asked if you muddled it. However, it sounds like you are slicing it into quarters with the skin on. If you want skin, try a 'flaming zest'
