On this day in 1975 the Equal Pay Act came into force, making it illegal to pay a woman less than a man for doing the same job, or give her fewer benefits. 36 years later men do, of course, still earn more than women. But this year, for the second year running, women in their 20s will earn very slightly more than men the same age. Does this mean we are on the way to equality, or even past it? Well, no, not really. Because as soon as the average chap hits 30, he is way ahead again. But we are getting closer. And, that we think, is a subject worth celebrating, perhaps with a cocktail from Diffords guide to drinking! LAZY MAN FLIP Glass: Sour or Martini/Coupette Garnish: Orange zest twist (discarded) and freshly grated nutmeg Method: SHAKE all ingredients with ice and fine strain into chilled glass. 1½ shots Ruby port ¾ shot Boulard Grand Solage calvados ¾ shot Double (heavy) cream ¼ shot Monin Pure Cane sugar syrup (65°brix, 2:1 sugar/water) 1 fresh Egg yolk Comment: Obviously creamy but not too sweet with a great balance between the port and the calvados.
