I don't exactly want a cocktail, but I have a coconut liqueur, not Malibu - this one was from Norfolk Island when we were there for a week. But although I like Malibu I have never quite got the right mixer with it. I tend to like sweet liqueurs (don't really want to taste whisky etc), but lemonade in this makes it too close to a soft drink. Soda water is the best I have managed, but it's a bit bland; I don't think it suits tonic water (which is my favourite fizzy drink really), so I am a little at a loss. Coke would surely overwhelm the coconut taste and anyway I am not fond of coke. So what should I do with it? I don't want to spend hours on a fancy recipe, just something simple to enhance it. Can't beat a good ole Pina Colada! .... but you said simple so here's simple..... Caribian Buck Drink Type: Cocktail Ingredients: 1 1/2 oz. Coconut Liqueur 2/3 oz. Lime Juice Ginger Ale Instructions Pour over ice in a cocktail glass and fill with Ginger Ale. Cocomoni Drink Type: Cocktail Ingredients 1 1/2 oz. Coconut Liqueur 2 oz. Grapefruit Juice 2 oz. Tonic Water Instructions Build in a tall glass over ice. Lake Breeze Drink Type: Cocktail Ingredients 1 tsp. Coconut Liqueur 4 oz. Cranberry Juice 2 oz. Pineapple Juice Lemon Lime Soda Instructions Shake all ingredients - except soda - with ice and strain over ice cubes into a collins glass. Fill with soda and garnish with a twist of lime. Thank you both. Havng said I like cocktails sweet, of course I don't want them sickly, so I'm not sure about pineapple juice. Might try grapefruit though. I'll ignore the fact it doesn't go with with simvastatin. |

...coconut and pineapple have a great affinity especially in drinks! The Pina colada with rum added is one of my favourite holiday/summer cocktails along with any fruit daiquiri.....
