Crawfish Stew 3 tablespoons shortening 1/2 cup minced green pepper 3 tablespoons flour 1 large onion, minced 4 cups water, approximately 1/4 cup minced celery 4 cups raw crawfish meat Salt and pepper 1 clove garlic, minced In a skillet, melt shortening and stir in flour. Cook, stirring constantly, until dark brown in color. Add onion, celery and green pepper; mix thoroughly. Gradually add water to make a gravy and continue cooking until onions are tender. Add crawfish, garlic, salt and pepper. Continue cooking about 20 minutes longer. Serve over cooked rice. Yield: 6 to 8 servings. |
