Crawfish Spaghetti

1/4 cup shortening
1 can (8 ounces) tomato sauce
1 large onion, chopped
1/2 cup chopped celery
Salt and pepper
1/2 cup chopped parsley
2 pounds crawfish meat
2 cloves garlic, minced
1/2 cup sherry wine
1 can (1 pound 3 ounces) whole tomatoes
1 pound spaghetti, cooked
Grated Italian cheese
1 1/2 cups water

In a saucepan, melt shortening; add onion, celery, parsley
and garlic. Sauté until golden brown and transparent.
Add tomatoes, tomato sauce and water; season. Cover and
simmer for 3 hours, stirring occasionally. Add crawfish
and wine; continue cooking for 30 minutes. Add cooked
spaghetti to sauce; mix well. To serve, sprinkle generously
with cheese. Yield: 8 servings.
