Fried Crawfish 4 dozen large crawfish tails 4 lemon wedges 1 teaspoon salt 1 cup milk 1/8 teaspoon black pepper 1 cup flour 1/8 teaspoon cayenne Dip crawfish tails in seasoned milk; then roll in seasoned flour. Fry in deep hot fat (350°F.) for 2 to 3 minutes or until golden brown. Drain, serve with lemon wedges. Yield: 4 servings |
