Trout Amandine 2 lbs fish fillets 2 eggs 1/2 c milk 1 tsp salt 1/2 tsp pepper 1/2 c pancake flour 2 6 oz pkg slivered almonds, toasted 1/2 stick butter, melted 1/2 lemon, juiced Have fillets cleaned and prepared. Beat eggs well. Add milk, salt, peppers, and 3 tbsp flour. Dip fish in the batter and set aside about 30 minutes. Sprinkle remaining flour on separated fish. Deep fry at 375 degrees. Toast almonds in oven until brown. Add almonds to melted butter and lemon juice. Serve over warm fried fish. |
