[size=5]Roasted Salmon with Citrus Herb Sauce[/size] (serves: 4) 1 large onion, thinly sliced 2 1/2 T. olive oil, divided 1/2 C. orange juice, divided 4 salmon fillet (about 1/3 lb each) 3 T. chopped fresh dill, divided 1/2 t. kosher salt, divided 1 fresh ground black pepper 2 T. thinly sliced green onions 1 T. lemon juice __________________________________________________ 1. Preheat oven to 450. Place onions in a 9 x 13 baking dish, and drizzle with 1 1/2 Tbsp oil, and 2 Tbsp orange juice. Roast on center oven rack about 20 min, or until the onions are soft and golden. Remove from oven and push onions to the side of the dish. 2.Place salmon in baking dish, sprinkle with 2 Tbsp dill, 1/4 tsp salt, and some pepper. Drizzle with remaining oil. Spoon onions over the top and bake on center oven rack about 10 to 12 minutes or until cooked through. 3. While the salmon is cooking, combine the remaining dill, remaining salt and some pepper, green onions, orange juice and lemon juice. Pour orange sauce over the roasted salmon and serve. |
