[size=5]Portuguese Bread-Garlic Soup[/size] (serves: 6-8) 1 T. oil 1 loaf day old country bread, crust removed, cut into small dice 10-15 cloves garlic, smashed 8 C. chicken stock 6 eggs, beaten __________________________________________________ Saute garlic in oil until softened. Add diced bread; saute until lightly golden. Add stock and bring to boil. Lower heat and simmer. Pour in eggs in a small stream over a fork. Continue simmering 1-3 minutes, or until eggs are cooked to your liking. Season to taste. Source: Infinite Soups |
