I have come to prefer something called lump coal. Its actually just charred lumps of wood. It burns cleaner, more evenly, and is easier to start. Charcoal is cheaper, and more accessable, however, it generally has chemicals in it to help it ignite, but doesnt last nearly as long as lump coal, and doesnt burn as easily.

Gas is either for noobs who cant build a fire (me), or for just quick grilling (see topic on the difference between bbq, and grilling).

As far as the firestarting thing is concerned, my dad showed me how to use a chimney last summer, and it was so easy, I probably could do it myself. Problem is, I have a gas grill, and not planning on getting a regular one any time soon. I can still bbq a killer brisket on my gas grill though, so :P
