[size=5]Pork Roast with Sweet Potatoes[/size] (serves: 4-6)

3-4 lb. Pork loin roast
2-3 Sweet Potatoes
1 Bell Pepper (I used yellow, but green or red are perfectly acceptable too)
½ C. Apple cider
3 T. Brown sugar
1 t. cinnamon
__________________________________________________

Put pork in the slow cooker. Cut sweet potatoes and green peppers in large pieces and add them. Mix the remaining ingredients and pour over all; cook all day on low. Serve with rice. If desired, use a cornstarch and water mixture to thicken the sauce.
