[size=5]Basic Cornbread[/size] (serves: 6-8)

1 egg, beaten
1 1/3 C. milk*
¼ C. oil, or melted shortning
2 C. cornmeal
1 T. baking powder
1 t. salt
__________________________________________________

Heat oven to 450°F. Grease a 9 inch ovenproof skillet or 9 inch square pan; **place in oven to heat. In a large bowl, combine all ingredients; mix well. Pour batter into greased pan. Bake at 450°F for 20 to 25 minutes.

TIPS:
* 1¾ cups buttermilk may be substituted for milk
** Recipe can be baked in muffin cups or cornsticks pan. Grease 12 muffin cups or cornsticks pan. Fill muffin cups or cornsticks pan 2/3 full. Bake at 450°F for 15 to 20 minutes or until golden brown.

Variation: Sausage Cornbread: Stir in ½lb. cooked sausage into prepared batter.
