[size=5]Cornmeal Pancakes[/size] (serves: 20)

1 egg slightly beaten
2 C. buttermilk
2 T. oil, or melted shortening
1½ C. yellow corn meal
1/3 C. all purpose flour (Bobs Redmill)
1 t. baking soda
1 t. sugar
1 t. salt
__________________________________________________

heat griddle or large skillet (350°F). Grease lightly with oil. In a large bowl, combine all ingredients and mix well. Pour about ¼ cup of batter for each pancake onto the griddle. Cook for 1 to 1½ minutes, turning when edges look cooked and bubbles begin to break on surface. Continue to cook until golden brown.
