  • 1 cup self-rising flour = 1 cup all-purpose flour plus 1 tsp baking powder, and ½ tsp salt
  • 1 tsp baking powder = ½ tsp ceam of tartar plus ¼ tsp soda
  • 1 Tbs cornstarch or arrowroot = 2 Tbs all-purpose flour
  • 1 cup sour milk, or buttermilk = 1 Tbs vinegar or lemon juice plus sweet milk to equal 1 cup
  • 1 (1-ounce) square of unsweetened chocolate = 3 Tbs cocoa plus 1 Tbs butter or margarine
  • 1 Tbs fresh herbs = 1 tsp dried herbs, or ¼ tsp powdered herbs
  • ¼ cup chopped fresh parsley = 1 Tbs dried parsley flakes
  • 1 tsp dry mustard = 1 Tbs prepared mustard
  • ½ lb fresh mushrooms = 4 ounces canned mushrooms
  • 1 cup tomato sauce = 8 ounces canned stewed tomatoes blended in a processor until desired consistency
  • 1 cup sour cream = 1 cup yogurt or ¾ cup sour milk or buttermilk plus 1/3 cup of butter
  • 1 cup heavy cream = ¾ cup milk plus 1/3 cup butter
  • 1 clove garlic = 1/8 tsp garlic powder
  • 1 cup brown sugar = ¾ granulated sugar plus ¼ cup molasses
  • 1 cup sugar = 12 packets Sweet 'N Low © or 24 packets Equal ©
  • 1 whole egg = 2 egg yolks
