[size=5]Banana Bread[/size] (serves: 10) 1/3 C. oil 2/3 C. brown sugar, packed 2 large eggs 1 t. vanilla extract 1¾ C. All purpose flour (Bobs Redmill gluten free) 2 t. baking powder 1¼ t. cinnamon 1 t. xanthan gum ½ t. salt 1½ C. mashed ripe bananas ½ C. chopped pecans or walnuts ½ C. raisins __________________________________________________ Preheat oven to 350°F. Grease a 9x5 inch nonstick loaf pan, or 3 5x3 inch loaf pans. Cream oil, sugar, eggs and vanilla in a large bowl. Add flour, xanthan gum, salt baking powder and cinnamon to egg mixture, alternating with bananas. Beat until smooth. Stir in raisins and nuts. Bake for 1 hour in the 9x5 pan, or 45 minutes in the 5x3 pans. |
