1½ C. gluten free baking powder (Bobs Redmill)
1 C. brown sugar
½ C. unsweetened cocoa powder (not dutch)
1 t. baking soda
1 t. xanthan gum
¾ t. salt
½ C. milk(cow, soy, or rice)
1/3 C. butter, margarine, or shortening
1 large egg
1 t. vanilla extract
¾ C. warm (110°) brewed coffee
__________________________________________________

Preheat oven to 350°. Grease 11x7 inch nonstick pan. Place all ingredients, except coffee, in a large bowl and blend. Add coffee and mix until thoroughly blended. Pour into prepared pan and bake for 30-35 minutes or until toothpick inserted into the center comes out clean.
