That's an excellent point, Raven. I agree that the stress and post-SHTF way of eating would put a lot of people at serious risk. Some prep sites say you should keep multi vitamins as part of your stores. However, many vitamins in pill form have very short shelf lives. So, I don't know if its practical to try to keep them long term. I suppose a person could keep an extra bottle or two on hand and be religious about rotating and using the oldest. My biggest concerns are vitamin C and iodine. To help with that, I would plan to have dried citrus fruits (peel) to use as a source of vitamin C - true its not as good as 'fresh', but certainly better than nothing. Canned tomatoes also provide vitamin C. I also would store only iodized salt for eating. You shouldn't use it for canning, etc. but your body needs it and that seems to be the simplest way to provide it. Canned seafood will give you some, too. So, I agree, for short term and to make it through to the next growing season, vitamin pills would be a big help.

Several of the preparedness sites that sell storage food also sell vitamins that are prepared for more of a long term storage. I haven't checked into them very well as I always thought that we had stored a balanced diet but I think that I may check them out now. It would be especially valuable for those with growing children.
I would think that it would be prudent for us to learn to eat more vitamin and mineral rich foods now rather than figure it out later.
