I was able to get 15 live cull breeding turkeys from an organic turkey grower. These hens were about 30 lbs each. A friend of mine and I spent all day yesterday butchering them and today I spent all day cubing, cooking and canning the breast meat. Lucky us!! So far I have gotten 42 pints of cubed meat. Tomorrow, I will finish and end up with almost as much more. I kept the drums, thighs, and backs for dog food. The best part?? The birds were $5 each :-) He will have more later in the year that I can make into ground. The birds are to old for good roasters but the canned meat will be great to have on hand for a sudden influx of long term guests. |

Wow - that sounds like a lot of work! I've never tried to can turkey - I bet its not a lot different than chicken and I have done that. It was easy enough and was nice to have for quick meals. I've never made sausage - do you need to add some sort of fat to it? You do when you make venison summer sausage, if you don't the meat wont stick together. I got an electric grinder for Christmas this year and I haven't used it yet - I had a bit of venison that I ground up, but just used my good 'ol hand crank - it doesn't require any special assembly and it does not have 12 pages of instructions!!
