Today I made cottage cheese and yogurt. I would have like a bit larger curds in the cottage cheese and think maybe I should use lowfat rather than whole milk. It has a texture more like ricotta cheese. Oh well, salt and lots of fresh cracked pepper and its great! Not sure yet on how the yogurt will turn out - it has to sit for 8-10 hours before I can check it. I stll really want to learn to make "real" cheese that is pressed and then aged. But, I may just try some farmer (soft) cheese and see how that goes. I read that goat milk makes wonderful cottage cheese; I am sure you know that HF!

I have made cottage cheese before and I loved it! It isn't exactly the same as store bought but I liked it way better. I use it for casseroles and lasagna etc. If you add chives and garlic it is a great potato topper and a cracker spread.
My goats just came in (2 of them anyway) and I want to make some soap and cheese after the kids are weaned.

I read somewhere that if you make your own cottage cheese and press in in a cheesecloth, you come out with cream cheese and I can see that, with the small curds, it would be easy enough to make it cake together. I bet chives and garlic WOULD be good mixed in.

I am so excited about your goats! I haven't had goat milk in literally years! My gramma used to get it once in a while from a neighbor and, back then, I wasn't real fond of it. It didn't taste exactly like cows' milk and, therefore, it was WEIRD!! But, I'd like to try it as an adult and see what its like. I've heard it makes excellent butter and I've had goat cheese and that's delicious!

So, I've decided what I wanna be when I grow up.... a farmer's wife!!! LOL

Well MommaCat, you need to meet a farmer first. I'll go dig around and see what I come up with.....any kind of farmer your interested in? I know a sweet single fish farmer if you like fish!

Now, now, don't rush into any thing. It's not all fun and games, just a lot, lot better than living in town. Our whole place is full of new animals. We even have a pet goose that follows me every where when I'm in the chicken pen. I can honestly say I've never been able to pet a goose before. I think he'd even follow me into the house if I let him out but I'm not sure the dogs would leave him alone. Your grandson should have a blast when you come down. Maybe we should just build you a guest house.

Griz is right...don't rush it. Get to know the farmer for a few minutes before you rush in.

And to be sure-Farming is ALOT of work but the rewards Griz mentioned are well worth the effort. All the fresh real food you can grow and eat, raised on fresh air, sun shine and green grass. Not to mention an occasional bite in the leg from a bore looking to get your attention, or a billy sticking his head in the grain scoop and getting it stuck, or the defense chicken clawing into you when you come to feed them.....you find it all right on the farm-drama, comedy and sweet animals to enrich anyone's life. It makes me wonder why so many people gave it up.

OMG!! LMAO!! Well, maybe my friends should pick one out for me as I don't seem to do such a great job on my own!! I'm not so sure that after being single for over 25 years that I'd be a very good companion!! But, anyway, really am getting anxious to come down for another visit! So is the Grandbrat, he's all excited to go find eggs again!
