Zucchini Uses; Zuccini Gummy Candy

Well, its getting to be that time of year when you don't dare leave your car unlocked for fear that someone will unload that bumper crop of zucchini into your back seat. So, in self-defense, and because I can't stand to waste anything, I have collected a whole file of recipes to use it. This is one of the more novel ones. It's actually pretty good if you like gummy candy. I don't, but the boy-child and all his cousins, do. I usually do two batches in seperate pots so we end up with two flavors; strawberry and orange are are good; I tried lime once and it wasn't a favorite.

I'd love to hear what other novel ways any of you have come up with to use zucchini.

Zucchini Gummy Candy

One large zucchini (the kind that look like baseball bats)
1 1/2 cups of sugar
1 pkg of unsweetend powdered drink mix (Kool-aid)
8 cups of water

Coating
3 Tblsp. powdered sugar
1 Tblsp. cornstarch

Peel zucchini, cut out center part with the seeds and discard, make sure you have only the firm flesh and none of the pithy stuff. Cut the zucchini into one-inch pieces; make the chunks as uniform as possible for even drying.

Stir the drink mix, water and sugar together in a large pot and heat to a boil. Add zucchini chunks and reduce to a simmer. Cook, stirring occasionally, until the zucchini is translucent, about 20-25 minutes. Drain mixture into a colander. When cool enough to handle, place pieces on dehydrator racks with no pieces touching. A fruit leather tray works best, if you have it. Dehydrate until pieces feel a bit squishy but still firm. It takes about 16-17 hours in my little countertop model.

Shake 3 Tblsp. powdered sugar and 1 Tblsp. cornstarch in a plastic bag or large bowl with a lid to mix; add zucchini pieces and gently toss lightly to coat pieces. This step prevents the pieces from being sticky.

Store in an airtight container – refrigeration isn't necessary. These should keep for a long time, but I've never actually had a batch sit around for more than a couple days, so can't say for sure how long.

The vendor next to us at the Farmer's Market had a bunch of zukes. I can't believe how expensive they are! I wish someone would give me some for free. I paid $1.50 for 3 of them but they were perfect...very small and tender and very, very fresh. Love those farmer's markets.

We didn't put in zucchini this year after having it 3 times a day for months on end, but am missing it now....
I'll have to give this recipe a try but I only have raw sugar so it might be so pretty but still tasty.
