I was down near the southeastern corner of Minnesota this past week and on the way home today had the opportunity to stop in at a vegetable cannery. I picked up 7 cases of various canned veggies for $6.50 a case. I was pretty excited. I think Raven and I had talked about it last year, but I never got a chance to go. The cannery is in Plainview, east of Rochester. They have a "dent store" and if a can in a case gets dented, they have to pull the whole case. The cans do not have labels as they are shipped to other companies to put their private labels on, but the boxes are marked. I got the regular size cans, but I did see that they had some of the big (gallon?) size cans of veggies, too. They didn't have any green beans this time, but usually they do, I was told. They did have potatoes, but I didn't get any as I'm not fond of canned potatoes and would rather have dried for my stores. I sort of wished I had my truck, but we were on vacation and I just had my car, so that was all I could fit. But, now that I know where it is and how the thing works, I think I will make it an annual stop as we got down there every summer for vacation.

Oh, and another great find - I got a 12 gallon Red Wing crock from my cousin. He used to have an antique store in Cannon Falls and he has lots of crocks in various sizes left over from when he closed the store. He finally sold me one of the bigger ones and I am beyond excited about that! All in all, it was a great vacation!!

Sounds like a place I'll have to visit!

I am on the final end of a tote (4*4*3 high) of corn I got at the Amish market Friday. I already di 40 qts peaches, a bushel string beans and have the tote to finish before its on to tomatoes.

I have several rows of potatoes left to dig up and was hoping to try my hand at drying some but the work involved seems overwhelming - bake them, then slice, dice or flake them up and into the dryer. Still, for the space savings, it might be worth it.

There is also an Amish Auction in St Charles now. Might try to get there sometime too. If you find an Amish supplier of jars, they only want $4 for 12 pint jars and $8 for 12 qt size. No lids or screw tops though.

Also, I found the website for Wrek jars since I found out Tattlers lids have BHT in them, not going there. The thing about the Wrek jars is I don't like how they have to be handled when putting the rubber ring on.

I also want to get up to the cannery. One note of caution is that dented cans, no matter how small of a dent, can leave a microscopic hole in the metal leaving you with the possibility of bacteria entering the can. When I do get there, I plan on dehydrating when I get from there.

The cans that I bought were not actually dented - they were from a case that was dented and so the whole case had to be broken up. I am very leary of anything canned so I check carefully before I open and eat the contents. But, its a good reminder about food safety.
