So, I looked through the Handbook and took the best rated units that fit my Khorne theme. DP, BSB, Warriors, Hounds, Chariots, and Chimera... plus Skullcrushers because what Mono Khorne army doesn't have them :P

410 – Daemon Prince – DoK, Chaos Armor, Daemonic Flight, Dragonbane Gem, Charmed Shield, Other Trickster's Shard, Scaled Skin, Flaming Breath, Soul Feeder, Acid Ichor, Burning Body.
248 – Exalted Hero – BSB, Mok, Juggernaut, Talisman of Preservation, Shield.
390 – 18 Warriors – Mok, Halberds, Shields, FC.
390 – 18 Warriors – Mok, Halberds, Shields, FC.
90 – 3x5 Warhounds.
140 – Gorebeast Chariot – Mok.
140 – Gorebeast Chariot – Mok.
140 – Gorebeast Chariot – Mok.
275 – Chimera – Regen, Flaming Breath.
274 – 3 Skullcrushers – FC, EW, Banner of Eternal Flame.

2497

I took only the best options (based on the Handbook's opinions) that fit my theme, so no Trolls. I felt my BSB needed to be on a Jugger since I gave the DP Scaled Skin, so I added the Skullcrushers even though they weren't rated amazingly (I could replace them with a Chimera and put my BSB in the Warriors). I plan on assassinating my enemy's lvl 4 wizard with the Chimera (or DP). I'm also thinking I can do the Denied Flank tactic by putting 1 chariot on one side of the warriors and the other 2 and the Skullcrushers on the other side. I could also deploy my DP and Chimera with the single chariot, to feint that flank, as they can fly wherever on turn 1.

Any major concerns?

You are going to want Charmed shield and Dragon bane gem on the DP. He is too expensive and vulnerable to cannons not to. Dwarfs typically run a flaming cannon, and Daemons have a flaming cannon as well now, so Dragon bane gem is a must. It also helps with anything that has flaming CC attacks, such as units with the flaming banner (which exist in ~1/3 of all armies), the K'daai Destroyer, and metal magic.

Other than that, I don't see anything major.

Keep in mind the chimaera will often be a better mage-hunter than the DP simply becauseitmcan't be challenged away... Once it hits the mage, it can direct all its attacks (regular, non-breath/stomp) at it, whereas the DP might have to go trough a challenge first... Overall I quite like the list, let us know how much of a pain not fielding any magic ends up being...

I took the Charmed Shield off the BSB and onto the DP, as well as the gem and Other Trickster's Shard. I added the shard mostly to keep him the same pts, but I'm sure it'll come in handy.

The Chimera is the primary mage-hunter, but if for whatever reason the Chimera can't do its job, the DP can atleast keep the wizard locked in combat for the entire game.

I can tell you that not using any magic is never a pain, as I can lose every game knowing I'm not a cowardly, miserable High Elf :)

I honestly can't see a Chimera working as a mage hunter in most situations. It's simply too easy to avoid by swapping the mage to another unit or, against a list like yours with no shooting or magic, simply out onto his own in a position you can't charge.

Certainly if it does manage to charge the unit while the mage is still there, you'll have a great time crushing it--just be sure to use the breath weapon to ensure you win combat and get a second go; 7-9 attacks will kill an enemy Lvl4 with 4++ less than half of the time at best (9 attacks hitting on 3s and wounding on 2s with no AS and a 4++ is 2.5 wounds).

If you want to play averages, we can. 6 Attacks +2 from the D3 is 8 attacks hitting on 3s and wounding on 2s. By my calculations, after the 4+ ward, I'll have done 2.16 wounds. So you're right, a lvl 4 with a 4+ ward will most likely survive the initial attack. Add in Combat Res (3 for the enemy, because my charge = his banner), I should be able to win with the Flame Breath and Thunderstomp.

Nothing in this game is foolproof, but do you have a better recommendation for taking out wizards? Because flying monsters are the only suggestion I've found on this forum.

Also, do most armies have a 4+ ward on their lvl 4? Instead of their general and/or BSB?
